Parsnip Mash

I love parsnips.  I know...people think I'm crazy.  But I do.  And one of my favorite things to do (besides roasting them with garlic and rosemary) is to mash them up.  So good!


Parsnip Mash


Bring pot of water to a boil.  Salt the water like you would for pasta.  Add pealed and chopped parsnips and a few cloves of garlic (the garlic will sweeten while it cooks...yum!).  Once the parsnips are fork tender, drain and return to the pot (including the cloves of garlic).  Add butter, a titch of mayo (not needed if you don't like mayo).  Mash like you're making mashed potatoes...adding a little bit of half and half or milk to until smooth.  Season with salt and pepper.  My favorite is to add some chopped scallions and fresh rosemary.  So yummy!
